No pictures... I fixed it and we ate it before I really thought about it being a new recipe to blog about. :) It was really, really good. We all enjoyed it. Before I say much more, here's the recipe...
Sauteed Worcestershire Chicken
1 1/2 lbs thin chicken breast cutlets
salt and pepper
1/3 cup all-purpose flour
3 Tbsp butter
2 Tbsp vegetable oil
2 Tbsp Worcestershire sacue
1 Tbsp red wine vinegar
1/2 cup low-sodium chicken broth
2 Tbsp finely chopped fresh parsley (I didn't use this)
1. Preheat oven to 200F. Sprinkle chicken with salt and pepper; dredge in flour.
2. Warm 1 Tbsp butter and 1 Tbsp vegetable oil in a large skillet over medium-high heat until butter foams. Add half of cutlets and cook until browned, about 4 minutes. Turn and cook until firm and browned on both sides, about 3 minutes longer. Transfer to a plate and loosely cover with a foil and put in warm oven.
3. Add another 1 Tbsp each butter and oil to skillet and repeat with remaining cutlets. Add to platter and keep warm in oven. (I did all my chicken, 3 cutlets, at the same time).
4. Add Worcestershire sauce, vinegar and chicken broth to empty skillet and bring to a boil, scraping up browned bits from bottom of pan with a wooden spoon. Boil, stiring occasionally, until thickened, about 5 minutes. Remove from heat and stir in remaining 1 Tbsp butter until it is melted. Season sauce with salt and pepper (I didn't add anything, it was plenty flavorful). Pour sauce over chicken and garnish with parsley. Serve immediately.
Very yummy dish. I especially liked that the chicken cooked plain so that the kids didn't have to eat a strong-flavored chicken. We served it plain for them to start. Maddux tried a bite with sauce and liked it so he had a puddle of sauce on the side to dip in. Ava wouldn't try the sauce at all, but she ate 2 helpings of chicken. I served it with steamed broccoli (Ava's fave) and baked potatoes. Good dinner, definitely a keeper. Enjoy! :)
