Meal Plan Monday

Here we go again...

Monday: sloppy joe's, beans, chips, kraft mac-n-cheese. I need an easy meal to prepare and one that allows me to easily eat just a little as I'm going out (Time Travellers Wife! followed by book discussion with wine and food).

Tuesday: pretzel chicken, corn-on-the-cob... hmm, I just realized I need another side with this. See, I suck at meal planning. I always forget something.

Wednesday: leftovers, choice of: chicken casserole from Friday (is that gross? think it's too old?), pretzel chicken (if there's any left) or sloppy joe with whatever else you can find.

Thursday: It's karate night, which always messes up dinner. The kids do better if they eat before karate, Kevin and I will eat after. I let the kids pick Kids Cuisine meals. :) Kevin and I will do take-out or scrounge around.

Friday: I got nothing. It's the weekend right?

you sound like me. tonight is frozen lasagna night. how's that for easy?

My motto is that if leftovers look fine and smell fine then they must be fine. Our society is too paranoid about expiration dates and things like that. And this is coming from someone who is super picky about anything with meat in it.

My rule on leftovers is 3 days usual and 4 days if it's a super yummy food that I can't bare to toss out.

Thanks for getting me motivated about menu planning. It's one of those things I hate to do but love when it's done. I love grocery shopping only once a week. Now, if I could only get everything I need at one grocery store. I always end up hitting Walmart, Target, Aldi and the Teeter on alternating weeks.
