Meal Plan Monday

I'm stealing this idea from Leigh and Jen. :) Meal-planning is my undoing when it comes to eating at home. I despise meal-planning. We really need to eat in more though... and having Kevin bring something home doesn't count.

I put a very simple meal plan together for this week. It really doesn't get much simpler than this. Don't laugh.

Monday: Chicken Enchilada's - uses up leftover grilled chicken and I already have tortilla shells

Tuesday: leftovers

Wednesday: Salsa Beef Skillet - we used to eat this ALL the time. Then we burned out. I'm giving it another shot after months of not having it, we'll see how it goes over.

Thursday: leftovers - unless it doesn't go over so well

Friday: order pizza - it's Candy Bingo night at Ava's school, so we'll need something quick and easy

Weekend: We'll be at Kevin's parents. Hopefully eating at the absolute best mexican restaurant. Seriously, I want to eat there both days.

A few months a mentor of mine said something that has stuck with me, "If you don't know what you're making for dinner in the morning, you're not most likely not making dinner." I found that is 100% true for me. Good for you and other people that can plan for a week. I'm glad to see that I'm not the only person who serves a lot of leftovers. I try to make enough for two meals. Rick grilled turkey burgers and turkey brats last night and we're having the leftovers tonight.

I also plan for a week at a time, making meals that will last 2 days (or more!) so I only cook 3 days a week at most. Although yesterday I made a greek dish that will last at least 6 days...we'll end up sick of it before we run out! Anyway, wanted to add that your Salsa Beef Skillet is Emily's favorite meal of all time! I make it at least once a month and she always eats bowl after bowl of it. I hope it's a hit again at your house!

I do this too. It is a task I don't like to do either, but it keeps us eating healthier meals. We only go out to eat one meal a week. It's usually Sunday night. I only plan about 3-4 meals per week with a few leftover nights. It works! Hope you find it worth doing!

I'm not crazy about meal planning either, but I do it and it works! My rule is I have to make my menu Sunday night and I can't watch Desperate Housewives until it's done. I haven't had to DVR it yet so it's working so far. I'm now sure what I'm going to use as motivation now that the season's over.

I think I will add the salsa beef skillet to our lne up. We don't do a lot of one pot meals, but that sounds good.
